Easy Salmon Loaf (Print Version)

# Ingredients:

→ Salmon Loaf

01 - 800g canned salmon
02 - 50g breadcrumbs
03 - 1 egg
04 - 100g feta
05 - 10g parsley, finely chopped
06 - 2 garlic cloves, minced
07 - 1 lemon, zested
08 - 1 onion, finely chopped
09 - 100g baby tomatoes, finely chopped
10 - 1 teaspoon paprika
11 - Salt and pepper to taste

→ Yogurt Sauce

12 - 3 tablespoon greek yogurt
13 - ½ tablespoon lemon juice
14 - 10g chives, finely chopped
15 - ½ tablespoon olive oil

# Instructions:

01 - Preheat oven to 190C/375F. Combine salmon, breadcrumbs, egg, feta, parsley, garlic, lemon zest, onion, tomatoes, paprika, salt and pepper in a large bowl.
02 - Optional: Fry a small amount of mixture to test seasoning and adjust if needed.
03 - Butter a loaf pan and line with parchment paper. Press salmon mixture into pan evenly.
04 - Bake for 40 minutes. Let cool in pan before removing.
05 - Mix greek yogurt, lemon juice, chives, olive oil, salt, and pepper. Serve with cooled salmon loaf.

01 - Can be frozen for up to 3 months
02 - Keeps in fridge for up to 4 days
03 - Can be served hot or cold
