Currywurst Topping (Print Version)

# Ingredients:

01 - 1 tbsp vegetable oil
02 - 6 tbsp chopped yellow onion
03 - 2 tbsp spicy curry powder, plus extra for garnish
04 - 1 cup tomato puree/passata
05 - 2 tsp balsamic vinegar
06 - 2 tbsp honey OR 2 tsp sugar
07 - 1 tsp Worcestershire sauce
08 - 1/2 tsp salt
09 - Water if needed

# Instructions:

01 - Heat oil in a pan over medium. Add onions, cook until soft without browning. Stir in curry powder, cook 1 minute.
02 - Add tomato puree, vinegar, honey or sugar, Worcestershire sauce, and salt. Simmer 10 minutes, adding water if too thick.
03 - Taste and adjust seasoning for spicy-sweet balance. Add a pinch of baking soda if too acidic. Blend smooth.
04 - Serve over sliced sausage, sprinkle with extra curry powder.

01 - Yields 1 cup—perfect for 4 servings.
02 - Adjust thickness with water as needed.
