Heat oil in a pan over medium. Add onions, cook until soft without browning. Stir in curry powder, cook 1 minute.

Add tomato puree, vinegar, honey or sugar, Worcestershire sauce, and salt. Simmer 10 minutes, adding water if too thick.

Taste and adjust seasoning for spicy-sweet balance. Add a pinch of baking soda if too acidic. Blend smooth.

Serve over sliced sausage, sprinkle with extra curry powder.
