In three separate shallow bowls, set up your breading station: In the first bowl, add the flour and season with salt, pepper, garlic powder, onion powder, and paprika. In the second bowl, whisk the eggs until well beaten. In the third bowl, place the panko breadcrumbs.

Take each chicken breast and dredge it in the flour mixture, shaking off any excess. Next, dip it into the beaten eggs, allowing any extra to drip off, and finally, coat it with the panko breadcrumbs. Press the breadcrumbs onto the chicken to ensure they stick well.

Arrange the breaded chicken breasts on a baking sheet lined with parchment paper or a lightly greased rack. This will help the heat circulate around the chicken, ensuring it cooks evenly and stays crispy.

Place the chicken in the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through and the coating is golden brown. To ensure even cooking, flip the chicken halfway through baking. The internal temperature should reach 165°F (75°C).

While the chicken is baking, combine the honey, hot sauce, and apple cider vinegar in a small saucepan over medium heat. Stir until the mixture is warm and combined. Taste and adjust the heat by adding more hot sauce if you like it spicier.

Once the chicken is done baking, remove it from the oven. Drizzle the warm hot honey sauce generously over each piece of chicken. Sprinkle the crumbled feta cheese over the chicken while the hot honey is still warm so that it begins to melt slightly.
