# Ingredients:

01 - 90% lean ground beef, 1 pound.
02 - Store-bought taco seasoning, 1 packet.
03 - Red enchilada sauce, 3/4 cup.
04 - Fresh Oaxaca or Monterey Jack cheese, 2 1/2 cups shredded.
05 - Yellow corn tortillas, 10 pieces.
06 - Olive oil for brushing, 1 tablespoon.
07 - Fresh guacamole for serving.
08 - Your favorite salsa for serving.
09 - Tangy pickled onions for topping.
10 - Cold sour cream for garnish.
11 - Fresh lime wedges for squeezing.

# Instructions:

01 - Start by getting your oven nice and hot at 450°F.
02 - Cook the ground beef in a big pan until no pink remains. Stir in your taco seasoning and enchilada sauce until everything's bubbling nicely.
03 - Get your tortillas ready by warming them between damp paper towels in the microwave - this makes them bendy and easy to fold.
04 - Brush each tortilla with oil on one side, flip it over, then layer in cheese, seasoned beef, and more cheese on half the tortilla. Fold it over like a half moon.
05 - Place your filled tacos on a baking sheet, making sure they're not touching each other.
06 - Slide them into the hot oven and bake until they're golden and crispy, about 16 minutes.
07 - Let them cool for a few minutes before diving in - they're super hot inside.
