Cranberry Brie Tarts (Print Version)

# Ingredients:

01 - 1 tablespoon melted salted butter.
02 - 2 cups fresh cranberries.
03 - 3 tablespoons brown sugar.
04 - 1/4 teaspoon ground cinnamon.
05 - 2 sheets thawed puff pastry.
06 - 16 ounces brie cheese, sliced into 24 pieces.
07 - 1/3 cup fig preserves.
08 - 1 beaten egg.
09 - Coarse sugar for topping.
10 - Fresh thyme sprigs for garnish.

# Instructions:

01 - Heat your oven to 425°F and put parchment paper on a baking sheet.
02 - Stir together melted butter, fresh cranberries, brown sugar, and cinnamon in a bowl until well combined.
03 - Cut each puff pastry sheet into 6 equal pieces. Spread a spoonful of fig preserves on each piece, leaving space around the edges.
04 - Place 2 brie slices on each pastry piece, then top with cranberry mixture, pressing gently.
05 - Fold pastry edges up to create a border. Brush edges with beaten egg and sprinkle with coarse sugar.
06 - Put in oven for 15-20 minutes until pastry turns golden and cheese melts. Add fresh thyme before serving.
