Spicy Cowboy Queso Dip (Print Version)

# Ingredients:

→ Base

01 - ½ pound hot or regular pork sausage, casing removed
02 - Kosher salt and black pepper, to taste
03 - ¾ cup Pale Ale beer
04 - 16 ounces Velveeta, cubed
05 - ½ cup shredded pepper jack cheese
06 - 1 can (14.5 oz) Rotel tomatoes, undrained
07 - 1 cup black beans, drained and rinsed
08 - ¼ cup fresh cilantro, chopped

# Instructions:

01 - Brown sausage in skillet over medium heat, breaking into crumbles. Season with salt and pepper.
02 - Pour in beer and simmer 3-4 minutes to reduce slightly.
03 - Add Velveeta and pepper jack, stir until completely melted, about 3-5 minutes.
04 - Stir in Rotel tomatoes, black beans, and cilantro until well combined. Serve immediately.
