Cornmeal Popovers with Honey Butter (Print Version)

# Ingredients:

→ For the Cornmeal Popovers

01 - All-purpose flour
02 - Yellow cornmeal
03 - Salt
04 - Eggs
05 - Whole milk, warmed
06 - Butter, melted
07 - Honey

→ For the Herb Honey Butter

08 - Unsalted butter, softened
09 - Honey
10 - Fresh herbs (thyme, rosemary, or chives)
11 - Salt

# Instructions:

01 - Preheat the oven to 450°F (230°C) and place a popover pan or muffin tin inside to heat. In a bowl, whisk together flour, cornmeal, and salt. In another bowl, beat eggs and warm milk until combined. Slowly mix wet ingredients into dry, stirring until smooth, then stir in melted butter and honey.
02 - Remove the heated pan and quickly grease each cup with butter. Pour batter into each cup, filling about ⅔ full. Bake at 450°F (230°C) for 15 minutes, then reduce the heat to 375°F (190°C) and bake for another 15 minutes. Do not open the oven door during baking. Remove from oven and let cool slightly.
03 - In a bowl, combine softened butter, honey, chopped herbs, and salt. Beat until light and fluffy.
04 - Serve warm popovers with a generous spread of herb honey butter.

# Notes:

01 - Ensure not to open the oven door while the popovers are baking to allow them to rise properly.
