Christmas Sugar Cookie Cheesecake (Print Version)

# Ingredients:

01 - Sugar cookies crushed, 2 cups.
02 - Unsalted butter melted, 6 tablespoons.
03 - Cream cheese softened, 24 ounces (3 packages).
04 - White sugar, 1 cup.
05 - Fresh large eggs, 3.
06 - Pure vanilla extract, 1 teaspoon.
07 - Sour cream, 1/2 cup.
08 - Holiday sprinkles, 1/3 cup plus extra for topping.
09 - Fresh whipped cream for serving.

# Instructions:

01 - Heat oven to 325°F and grease your springform pan.
02 - Mix your cookie crumbs with melted butter until sandy, then press into the pan bottom. Bake until it smells sweet, about 8-10 minutes.
03 - Beat cream cheese and sugar until fluffy. Add eggs one by one, then mix in vanilla and sour cream until smooth.
04 - Fold in your holiday sprinkles with gentle strokes to keep them from bleeding.
05 - Pour filling over cooled crust and bake about an hour until mostly set but still jiggly in middle.
06 - Turn off oven, crack the door, and let cake rest inside for an hour.
07 - Let it cool on counter, then pop in fridge overnight.
08 - Top with fresh whipped cream and extra sprinkles just before serving.

# Notes:

01 - Best when chilled overnight.
02 - Gentle mixing keeps sprinkles from bleeding color.
