Chocolate Strawberry Cheesecake Supreme (Print Version)

# Ingredients:

→ Chocolate Crust

01 - 2 1/4 cups (302g) Oreo cookie crumbs (25-30 Oreos)
02 - 4 tablespoons (56g) salted butter, melted

→ Cheesecake Filling

03 - 3 cups (380g) chopped strawberries
04 - 24 oz (678g) cream cheese, room temperature
05 - 1 cup (207g) sugar
06 - 3 tablespoons (24g) flour
07 - 1/2 cup (115g) sour cream, room temperature
08 - 1 1/2 tablespoons strawberry extract
09 - 4 large eggs, room temperature
10 - 8 drops red food coloring

→ Chocolate Ganache

11 - 8 oz (227g) semi sweet chocolate chips
12 - 1/2 cup (120ml) heavy whipping cream

→ Whipped Cream Topping

13 - 1 cup (240ml) heavy whipping cream, cold
14 - 1/2 cup (58g) powdered sugar
15 - 1 teaspoon vanilla extract
16 - Pink gel icing color
17 - Chocolate covered strawberries for decoration

# Instructions:

01 - Combine Oreo crumbs and butter. Press into springform pan. Bake at 325°F for 10 minutes. Wrap pan in foil for water bath.
02 - Puree and strain strawberries. Cook puree until reduced to 1/2 cup, about 20 minutes. Cool completely.
03 - Beat cream cheese, sugar, flour until smooth. Add sour cream, strawberry puree, extract, eggs one at a time. Add food coloring.
04 - Bake in water bath at 300°F for 1 hour 10 minutes. Cool in oven with door closed 30 minutes, then cracked 30 minutes. Chill 5-6 hours.
05 - Pour hot cream over chocolate, whisk until smooth. Pour over cheesecake and spread evenly.
06 - Make pink whipped cream, pipe around edge. Top with chocolate covered strawberries before serving.
