Crispy Chicken Potato Croquettes (Print Version)

# Ingredients:

01 - 4 cups boiled potatoes
02 - 2 cups Shredded boiled chicken
03 - 1/2 cup cheese
04 - Salt as per taste
05 - 1 teaspoon black pepper

→ Coating

06 - 2 eggs
07 - 1/2 cup panko or other breadcrumbs
08 - 1/2 cup flour

# Instructions:

01 - Cook and shred chicken with salt and black pepper. Boil and mash potatoes.
02 - Combine the boiled chicken, potatoes, salt, pepper, and cheese in a mixing bowl. Mix to combine.
03 - Form the croquettes into long cylinders, each about 3 inches in length.
04 - Beat the egg with salt and pepper. Dip croquettes in flour, then in egg, and finally in bread crumbs.
05 - Place in the freezer for 30 minutes to allow the coating to set.
06 - Shallow fry for 5 to 7 minutes or until golden brown.

01 - Can use seasoned breadcrumbs or season plain ones with herbs
02 - Great way to use leftover chicken and mashed potatoes
03 - Can be made ahead and stored in refrigerator
04 - Leftovers keep 3-5 days in airtight container
