Buckeye Bars Peanut Chocolate (Print Version)

# Ingredients:

01 - 1 cup creamy peanut butter
02 - 1 stick butter, softened
03 - 1 teaspoon vanilla extract
04 - 2 ½ cups powdered sugar
05 - 2 cups chocolate chips
06 - 2 tablespoons coconut oil (optional)

# Instructions:

01 - Line a square 9x9 baking dish with parchment paper.
02 - Add the peanut butter and softened butter to the bowl of a stand mixer and beat on medium speed with a paddle attachment until combined thoroughly, scraping down the sides as it blends.
03 - Add the vanilla extract and blend on low speed. Gradually add the powdered sugar, ensuring not to over-pack the measuring cup. Continue mixing on low speed until a ball forms. The dough should not be too wet; if it is, add more powdered sugar.
04 - Transfer the peanut butter mixture to the lined pan and press it down with your fingers or the back of a wooden spoon, ensuring it is evenly distributed, especially into the corners.
05 - In a microwave-safe bowl, add the chocolate chips and coconut oil, if using. Microwave for 30 seconds, stir, and then heat for another 20-30 seconds until melted.
06 - Pour the melted chocolate mixture over the peanut butter layer and use a spatula to evenly spread the chocolate on top.
07 - Place the bars in the refrigerator for approximately 2 hours until the chocolate is fully hardened.
08 - Top with sea salt, if desired.

# Notes:

01 - Store in an airtight container in the refrigerator for up to three days.
02 - Use dark chocolate chips or milk chocolate chips as per preference.
03 - Coconut oil improves the chocolate’s consistency and adds a glossy finish.
04 - For accurate measuring, spoon the powdered sugar into measuring cups and level it off with the back of a butter knife.
