Cheesy Broccoli Stuffed Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 4 medium chicken breasts
02 - 1 tablespoon olive oil
03 - 3 tablespoons low sodium chicken broth

→ Spice Rub

04 - 1 teaspoon each garlic powder, salt
05 - ½ teaspoon each onion powder, paprika, pepper

→ Filling

06 - 1 cup small chopped broccoli florets
07 - 1 cup (4 oz) freshly shredded sharp cheddar
08 - 5 oz cream cheese, softened
09 - ½ cup red bell pepper, finely diced
10 - ¼ cup cooked, chopped bacon
11 - ½ teaspoon each dried parsley, dried chives
12 - ¼ teaspoon dried dill (optional)

# Instructions:

01 - Preheat oven to 375°F. Mix spice rub in small bowl, reserving 1 teaspoon for filling.
02 - Microwave broccoli with water covered for 2 minutes. Drain.
03 - Mix cream cheese with seasonings, then fold in broccoli, cheese, peppers, and bacon.
04 - Pound chicken, create pocket by slicing horizontally without cutting through. Stuff with filling.
05 - Season chicken with remaining spice rub. Sear in hot skillet 2-3 minutes per side.
06 - Add broth to pan, cover with foil. Bake 12-17 minutes until internal temperature reaches 160°F.
