Preheat your oven to 180C (350F). If you are using an electric non-fan forced oven, increase the temperature to 200C (390F).

Drizzle 1 tablespoon of honey over each sheet of puff pastry.

Divide the chopped walnuts, crumbled blue cheese, and grated Parmesan cheese evenly between the two sheets of puff pastry. Sprinkle fresh thyme leaves over the top and season with sea salt and cracked black pepper.

Roll up each sheet of pastry tightly. Cut each roll in half lengthwise, and tuck in the pastry edges after cutting to keep the filling intact.

On a sheet of baking paper, carefully twist each length of pastry and form them into a round coil shape.

Brush the pastry coils with milk to ensure a golden finish. Bake them in the preheated oven for 25-30 minutes, or until the pastry is puffed, golden, and thoroughly cooked.

Remove from the oven, scatter extra thyme leaves on top, and serve warm.
