Preheat the oven to 175°C (350°F). Grease an 8x8-inch square baking dish and spread the thawed hash brown potatoes in an even layer.

Place the pork sausage and diced onion in a large skillet over medium heat. Cook and stir until the sausage is browned and crumbled, approximately 10 minutes. Drain excess drippings.

In a large bowl, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper until well combined.

Pour the whisked egg mixture over the hash browns in the baking dish. Sprinkle half of the shredded Cheddar cheese evenly on top.

Spread the cooked sausage and onion mixture over the top of the casserole. Sprinkle the remaining Cheddar cheese evenly over everything. Cover the baking dish with aluminum foil.

Bake the casserole in the preheated oven for 1 hour. Then, remove the foil and return the dish to the oven. Continue baking for an additional 10 minutes or until a knife inserted into the center comes out clean.

Let the casserole stand for 5 minutes to set before slicing and serving.
