Place each potato on a cutting board and slice in half lengthwise. Place the halves flat side down and cut into quarters. If potatoes are large, cut each wedge once more to achieve approximately 1-inch thickness.

Add potato wedges to a large bowl. Drizzle with olive oil and toss to coat evenly. In a small bowl, mix salt, garlic powder, and Italian seasoning. Sprinkle seasoning mix and shredded parmesan cheese over wedges. Toss to coat evenly.

Arrange seasoned wedges in a single layer, skin-side down, on the prepared baking sheet. Bake for 25-35 minutes or until golden and fork-tender.

Sprinkle baked wedges with freshly chopped parsley or cilantro. Serve with your preferred dipping sauce.
