# Instructions:

01 - Preheat the oven to 375°F (190°C). Lightly grease a large baking sheet. Rinse potatoes under cold water, scrub to remove dirt, and pat dry. Remove any bad spots or eyes.
02 - Place each potato on a cutting board and slice in half lengthwise. Place the halves flat side down and cut into quarters. If potatoes are large, cut each wedge once more to achieve approximately 1-inch thickness.
03 - Add potato wedges to a large bowl. Drizzle with olive oil and toss to coat evenly. In a small bowl, mix salt, garlic powder, and Italian seasoning. Sprinkle seasoning mix and shredded parmesan cheese over wedges. Toss to coat evenly.
04 - Arrange seasoned wedges in a single layer, skin-side down, on the prepared baking sheet. Bake for 25-35 minutes or until golden and fork-tender.
05 - Sprinkle baked wedges with freshly chopped parsley or cilantro. Serve with your preferred dipping sauce.
