Avocado Bacon Grilled Cheese (Print Version)

# Ingredients:

→ Grilled Cheese Sandwich

01 - 2 slices seeded whole grain bread, or bread of choice
02 - 2 slices (1 oz each) cheese, such as cheddar, cheddar jack, or gruyere
03 - 1/4 ripe Fresh California Avocado, seeded, peeled, and sliced
04 - 2 slices crispy cooked bacon, cut or folded horizontally in half
05 - 1/2 Tbsp butter, melted
06 - 1/2 Tbsp mayonnaise

# Instructions:

01 - Preheat an individual sandwich maker. Place one slice of cheese on one slice of bread.
02 - Spread avocado slices over the cheese slice leaving a border. Add the second slice of cheese, bacon slices, and the other bread slice on top.
03 - Combine melted butter and mayonnaise. Spread half the mixture on the top slice of bread.
04 - Place the sandwich into the sandwich maker with the butter-mayo side down. Spread the remaining mixture on the other side of the sandwich, close the maker, and cook for 2 to 5 minutes or until golden brown and cheese is melted.
05 - Using a heat-resistant spatula or tongs, remove the sandwich. Cut in half and serve immediately.
06 - Preheat skillet over medium-high heat. Place the sandwich in the skillet and spread butter-mayo mixture on the second side of bread. Cook for 3 minutes, flip carefully, and press gently with a spatula or grill press. Cook for 2 minutes or until golden brown. Add extra butter if bread feels dry, cooking briefly on both sides.

# Notes:

01 - Using melted butter and mayonnaise results in a crisp texture and buttery flavor.
02 - A large avocado, averaging 8 ounces, is recommended. Adjust quantities if using smaller or larger avocados.
03 - Using two different types of cheese, such as Swiss and mozzarella, can elevate the flavors.
