Apple & Brie Stuffed Chicken (Print Version)

# Ingredients:

→ Chicken & Stuffing

01 - 4 boneless chicken breasts
02 - 1 teaspoon kosher salt
03 - ½ teaspoon black pepper
04 - 1 Honeycrisp apple, thinly sliced into half moons
05 - 4 ounces cold brie cheese, thinly sliced

→ Apple Cider Glaze

06 - 1 cup apple cider or juice
07 - 2 tablespoons pure maple syrup
08 - ½ tablespoon minced garlic
09 - 1 teaspoon Dijon mustard
10 - 2 teaspoons fresh thyme leaves
11 - ½ teaspoon kosher salt

# Instructions:

01 - Heat oven to 375°F. Prepare baking sheet with parchment or spray skillet.
02 - Butterfly chicken breasts. Season inside with salt and pepper. Layer with apple and brie slices, close to seal.
03 - Bake stuffed chicken 25-30 minutes until almost done.
04 - Simmer glaze ingredients until reduced by half, 12-15 minutes.
05 - Brush chicken with glaze and broil 10-12 minutes until internal temperature reaches 165°F.

01 - Keep brie cold for easier slicing
02 - Watch carefully during broiling
03 - Use 7-9 apple slices per breast
