# Instructions:

01 - Trim the ends of the eggplant and slice vertically into strips about 1 cm thick to ensure even cooking.
02 - Brush each eggplant slice with olive oil on both sides for even browning and to prevent sticking.
03 - Roast eggplant slices in a preheated pan for a few minutes on each side until lightly golden, or air fry at 190°C for 5-6 minutes to tenderize.
04 - Combine shredded cheddar and mozzarella cheeses with oregano, chopped onions, peppers, tomatoes, and sweetcorn in a small bowl for even ingredient distribution.
05 - Arrange pre-cooked eggplant slices in a single layer in your air fryer basket. Spread each slice with a thin layer of tomato paste for flavor coverage.
06 - Generously sprinkle the prepared cheese and vegetable mixture onto each eggplant slice. Dust with additional oregano for enhanced flavor.
07 - Cook in a preheated air fryer at 160°C for 6-7 minutes until the cheese is melted and bubbly, watching closely to avoid burning.
08 - Top with fresh basil leaves and serve immediately while hot and melty for optimal flavor and texture.
