# Ingredients:

01 - 3 pounds chicken wings (drumettes and flats).
02 - 3 teaspoons baking powder.
03 - 2 teaspoons kosher salt.
04 - 2 tablespoons gochujang.
05 - 2 tablespoons soy sauce.
06 - 1 tablespoon rice vinegar.
07 - 2 teaspoons sesame oil.
08 - 1 teaspoon sugar.
09 - 3 tablespoons melted butter.
10 - 1 cup mayonnaise.
11 - 1 tablespoon toasted sesame oil.
12 - 3/4 teaspoon sugar.
13 - 1/8 teaspoon Sriracha.
14 - Sliced scallions and sesame seeds for garnish.
15 - Cucumber spears and radish slices for serving.

# Instructions:

01 - Mix wings with baking powder and salt. Spread in a single layer and refrigerate uncovered for 6-24 hours.
02 - Heat air fryer to 380°F (193°C).
03 - Cook wings in batches for 25 minutes, shaking every 5 minutes.
04 - Whisk gochujang, soy sauce, rice vinegar, sesame oil, and sugar in a bowl.
05 - Mix mayonnaise, sesame oil, sugar, and Sriracha for the sesame mayo.
06 - Increase air fryer to 400°F (204°C) and cook wings 5 more minutes.
07 - Toss hot wings with sauce mixed with melted butter.
08 - Garnish with scallions and sesame seeds. Serve with sesame mayo, cucumber, and radish.
