Preheat air fryer to 400°F.

Combine Panko breadcrumbs, parmesan, salt, and pepper in large shallow bowl. Melt butter in microwave-safe bowl.

Working in batches, dip chicken pieces in melted butter, then coat in breadcrumb mixture, patting firmly to adhere.

Place coated chicken in air fryer basket without overcrowding. Optionally spray with olive oil. Air fry 7-8 minutes, flipping halfway through.

Continue process with remaining chicken in batches.

Whisk together honey, yellow mustard, and dijon mustard. Adjust to taste.
