8 Minute Lebanese Flatbreads (Print Version)

# Ingredients:

→ Lebanese Bread

01 - 1 x ~30cm/12" Lebanese bread (or other thin flatbreads)

→ Spiced Chicken Mince Spread

02 - 125g chicken mince (ground chicken)
03 - 2 tsp tomato paste
04 - 1 tsp Baharat spice mix (Lebanese 7 spice)
05 - 1/2 tsp sweet paprika (or smoked paprika)
06 - 1 garlic clove, crushed
07 - 1/4 tsp cooking salt (or half the amount of table salt)
08 - 1 tbsp finely chopped parsley or cilantro (optional, or substitute with 1 tsp dried oregano)
09 - 1 1/2 tbsp extra virgin olive oil

→ Essential Toppings

10 - Extra virgin olive oil
11 - 2 tbsp Danish feta or goat cheese, crumbled (or regular feta)

→ Optional Toppings

12 - Lemon juice, lightly drizzled
13 - Dried chili flakes or red pepper flakes
14 - 1 tbsp toasted pine nuts, roughly chopped (or substitute with pistachios, almonds, sesame seeds)
15 - 1 tsp finely chopped parsley or cilantro

# Instructions:

01 - Trim the Lebanese bread if needed to fit into a 30cm/12-inch non-stick pan, cutting only one side to prevent separation.
02 - Mix all the Chicken Spread ingredients in a bowl. Spread the mixture thinly and evenly across one side of the bread.
03 - Heat 1 tablespoon of olive oil in the pan over high heat. Place the bread meat-side down and cook for 90 seconds, pressing lightly to promote browning. The meat will adhere to the bread.
04 - Flip the bread with tongs to cook the bread side for another 90 seconds until golden and crispy. Reduce heat if browning too quickly.
05 - Transfer the bread to a cutting board. Sprinkle with crumbled feta and drizzle with olive oil. Add any optional toppings of choice, then cut into 8 slices and serve.

# Notes:

01 - Use high heat for crispier bread, but monitor carefully to avoid burning.
02 - Baharat spice blends are readily available, but you can make your own mix at home for a fresher flavor.
